Bellevue Hotel, Phoenix Court: Phoenix Rising

His heavy accent and rapid-fire reply, interjected with jovial laughter, make Executive Chef Cheong Kwan Loong of Phoenix Court an entertaining subject, albeit quite difficult to understand. Don’t be mistaken, however. His English may be lost to his audience but not his message — or his passion for food — especially when his award-winning culinary creations speak so eloquently for him. 



Appearing from behind the kitchen doors of Bellevue Hotel’s Phoenix Court, Chef Loong plops down on the table and wipes the stains from his spectacles with his equally stained apron, he mumbles his apologies and doesn’t waste any time getting down to business. “Please ask me a lot of questions,” he says with a smile.


Born and raised in Malaysia, Chef Loong has built an impressive career spanning over 30 years. His culinary passion found its roots working long hours in renowned hotels like Westin Philippine Plaza, the Tower Club, Shang Palace at Shangri-La Mactan and the American Club in Jakarta. His first job, he remembers, was spent as a kitchen helper, cutting meat and carving vegetables in Tai Hong Restaurant in Malaysia. 

Having perfected his kitchen skills and honing his impeccable palate, Loong has come a long way. Today, he still works in the kitchen but no longer as kitchen help. Rather, he puts on his toque as executive chef of Phoenix Court. 

Phoenix Court, Loong explains, has a special place in his heart because he considers it his pet project. From the layout of his kitchen to that of the dining hall, Loong took care of every detail and made sure that everything was executed according to his standards. 



On the onset, the restaurant looks like a typical Chinese restaurant with themes of red and gold echoing luck and prosperity, respectively. The interiors are a calming, muted palette of cream, punctuated with intricately carved wooden accents. At the center is the massive mural of a golden phoenix, a beautiful centerpiece (as well a conversation starter) by artist Gina Bocar. To complement the sophisticated surroundings, Chef Loong crafted a simple yet elegant menu. Among the dishes, the diner’s favorites — as well as the chef’s — are the delicate steamed dumplings with polonchay, Crispy Cereal Tiger Prawns, Two Variety of Chicken (Stuffed and Kong Po), and the Homemade Spinach Beancurd with Crispy Mushroom. And because they are handled by such expert hands, the simple, traditional Chinese dishes are elevated to a certain level of refined elegance, and every palate is sure to be pleased. Recently, Philippine Tatler hailed Phoenix Court as one of the Philippines’ best restaurants for 2011.


But more than the awards and accolades, Loong is delighted to see that his group of loyal customers is growing and that the fame of the Chinese restaurant is fast spreading by word of mouth. Ryan Chan, Bellevue marketing and communications director, shares in another interview that they were delighted — and equally surprised — that guests were now willing to take the once-dreaded trip to Alabang to feast at Phoenix Court. (Many large Chinese families take their Sunday pilgrimage to the restaurant, with the South Expressway now much improved.)

“When Phoenix Court first opened, only a few tables at a time were occupied,” Loong remembers. Today, it is quite a different story. It would be difficult — if not impossible — to get a table without reservations — especially on weekends and holidays. 


From a bare marble space, an elegant court of distinguished culinary stature has risen. Concluding the interview, Loong says, “(The restaurant has been successful because) this is my passion… My cooking comes from the heart.” And Phoenix Court echoes this conviction.

Daniel dela Cruz: Doorway to Decision


Daniel Dela Cruz once again proves his mettle with metal as he unveils his 10th one-man exhibit, entitled Doorway to Decision.


In his biggest and most experimental exhibit to date, Daniel explores spiritual crossroads, revealing very moving pieces that demonstrate tension as well as balance. “Everyone of us comes to a point when we have to take a stand, make a decision. Do we flee or do we fight? Each act we make has a consequence and how we deal with these consequences — Do we regret it? Do we embrace it? — intrigues me. Each piece I’ve made explores that and I hope the narrative resonates with the audience,” he says. 

Armed with a degree in Philosophy from UP, Daniel tackles the human complexity intelligently and gracefully. But despite exploring such a serious subject, his pieces are by no means somber. 

The 35 whimsical pieces, made from obstinate metals such as brass, bronze, copper and nickel, defy gravity. They teeter on cliffs; balance delicately on steel cables; leap, float and dance as if weightless. If not for his thoughtful inclinations, Daniel’s delft hand in creating beautifully fluid and balanced forms will have you entranced.

Best known for his graceful feminine sculpture, Daniel takes flight from his previous collections and fleshes out more masculine pieces. “Sculpting men is definitely more challenging for me. When sculpting women, just as long as the curves are correct, just as long as it flows, it will look beautiful. On the other hand, with men, any mistake in proportion and muscle will make it look completely off. But I did it for this exhibit because I wanted to challenge myself,” he says.

In Doorway to Decision, Daniel introduces kinetic pieces like “Beyond Infinity,” which has Rubenesque ballerinas slowly pirouetting atop their pedestal, and “The Darkest Hour Is Just Before Dawn,” a functional, sundial-like piece lit with LED lights. As you browse the other unique pieces, you will notice that acid and rust also play a great role in his new exhibit as Daniel has taken to experimenting with the elements to bring out color, depth and character. “Each of my pieces can be displayed outside. Rain or shine, rust or rain… It is supposed to age and degrade. It adds character to the pieces.”

Daniel has come a long way since his first exhibit in Ayala Museum in 2007 and with a grateful heart he concludes, “ I’m thankful to Dr. Joven Cuanang (one of the most respected art collectors in the country) for inviting me to exhibit in Pinto Art Gallery. It is a great honor. I will continue to push myself as an artist, even if it’s just an inch, just to prove that there is more that I can do.”

Manila Hotel : The Grand Dame by the Bay


The Manila Hotel is the place of many memories, history even. Michael Jackson, the Beatles and Gen.Douglas MacArthur once graced the halls of this proud institution. During his stay in the country, literary giant Ernest Hemingway had the highest praise to give to the “Grand Dame by the Bay.” When he was asked during an interview, “What makes a good story?” he answered with, “It’s a good story if it’s like the Manila Hotel.”




"History is not synonymous with old,” stresses the Manila Hotel’s assistant vice president of PR and corporate communications Nian Liwanag-Rigor. Glad to have successfully combated such a misconception, she shares that the challenge today for the Manila Hotel is preserving its heritage and remaining relevant in the 21st century — especially in a highly competitive scene as Manila. “With all due respect to the other hotels especially the chain hotels,” she says, “the Manila Hotel is not here to compete with them. We believe that we are in a league of our own — firstly because we have history. Unlike luxury, one cannot replicate history.”

Not much has changed it seems — the Manila Hotel will be celebrating its 99th year on Oct. 6 this year — the piano still plays on the elevated stage and its twinkling notes float over the scene of clinking glasses and guests engaged in conversation at the lobby. Our photographer turns to me and says, “You know you’re in the Manila Hotel when you see the chandelier and hear the piano playing onstage.” He fondly shares how as a boy, his father, the veteran lensman George Tapan, would take him along to shoots at the Manila Hotel. 
At first glance, it may seem that Manila Hotel has remained unchanged, but a walk through its corridors and a peek into its suites show that the Manila Hotel has very much adapted to the times. 

For example, restaurants have been revamped with more exciting dining concepts. The newly opened Cafe Ylang Ylang boasts nine stations of international cuisine. (As you go around each station, notice how the interiors reflect the country of origin of the cuisine). The ethereal French-inspired Champagne Room has become the toast of the town with its Cirque du Soleil inspired menu, “Degustacion.” With its spanking new health spa, pool and gym; fully-refurnished MacArthur lounge which has an unparalleled view of the bay; and its romantic Sunset Suite — the Manila Hotel is undoubtedly new and improved. 

On the other hand, all of the suites have been newly renovated. The rooms have retained much of their Old-World charm and elegance with warm wood interiors and capiz accents, but they are now fitted with upgraded, modern amenities like LCDs in the bathroom, Italian marble baths and VingCard electronic door locks to name a few. It is important to note that although new, the Manila Hotel remains fondly familiar. 

“If there is one hotel in the country that clearly reflects and mirrors the history of its host country, it would be the Manila Hotel. We believe that the Manila Hotel stands for a legacy of luxury, rich history and genuine Filipino hospitality.” Indeed, the Manila Hotel is where it rightfully belongs — at the heart and pride of Manila.

Bali, Indonesia: On this Island


As we touched down at Bali Ngurah Rai International Airport in Indonesia, the ladies and I were slightly surprised b the scorching rays and suffocating heat that greeted us in this tropical paradise. The Bali heat had our heads swirling and the intese rays further dried out our jet-lagged skin, but we soon discovered that the solution to all our skincare needs could be found on this island.


The grand Nusa Dua Beach Resort and Spa awaited us like an oasis in the sweltering desert. Trimmed with three-story high ancestral trees, lined with soft baby-powder sand beaches and sculpted gardens that would put even Babylon to shame, this five-star diamond hotel has pampered no less than the world’s kings and queens. After a quick freshening up in our superior suites, the group reassembled at the expansive lobby overlooking the Indian Ocean and we made our way around the 23 acres of lush gardens filled with familiar vibrant blooms like the gumamela, santan, kalachuchi and bougainvillea. The garden took 25 years to create, shares our enthusiastic guide, and was designed by the legendary landscape artist Made Wijaya, the creator of world-renowned gardens like the landscapes found in Bali Hyatt, Four Seasons Hotel and Jimbarnan. But from the thousands of local and exotic blooms that charmed the regal landscape, the one bloom that interested the group the most was the humble and timid camellia leaf plant. 


Originally found on the foothills of the great Himalayas, the camellia leaf is Pond’s newest discovery in its White Beauty Naturals line. As I dig my toes into the sand, the cool cerulean sea reaches out in waves and washes over my prickly skin. The iced mojito ordered from the nearby beach bar sweats under the hot, summer sun, staining the paper pages of the latest novel I’ve taken to reading. 
Kilometers away, far from the buzzed beaches of thumping bodies and the hypnotic beats of Boracay’s Summer Place and Epic nightclubs, I enjoy the quiet and the solitude.

The Dame of the Sea

As we ascend the steps towards Sirena, the group is greeted on this particularly cool night by a modest bonfire. The heat and the warm amber lights — coming from both the little campfire and the main dining area — effectively display Sirena’s seductive appeal. 

Sirena, which means “mermaid” in Filipino, offers an extensive menu of seafood creations as well as wines and cocktails. From sumptuous seared scallops to grilled lobster tails and pan-roasted black cod, each dish is the perfect execution of culinary creativity. This is, of course, thanks to Sirena’s multi-awarded chef Shivji. His ingenuity and artistry comes out as he takes local fresh produce and transforms it into beautiful, sumptuous works of art, each dish expertly paired with a distinguished wine. 


As we sip our nth round of drinks (The fan faves are the mojito and sangria.), we see lovers and honeymooners taking their time, deep in intimate conversation, oblivious to the outside world. Patti Javier, director of communications of the resort, follows our gazes and shares, “Shangri-La enjoys a foreign market of honeymooners from Korea, Japan, Europe, Malaysia and Southeast Asia. It’s a pretty new market. And we are expecting more when another local airline opens direct flights from Hong Kong to Caticlan.”

Since opening in 2009, Shangri-La’s Boracay Resort and Spa has been enjoying a strong surge of visitors. During the trip, the resort was buzzing at 80 percent occupancy. “We are turning three years old and we already have return market. We are glad that they still enjoy what we have to offer,” continues Patti.

Not surprising, since the world-class resort is the embodiment of luxurious setting and five-star Asian hospitality nestled in a dream destination. Shangri-La’s winning vacation equation doesn’t make it hard to see why so many foreign and local guests choose to spend their precious down time here. 

As our feast parades into the room and onto our table, we catch a glimpse of the horizon. Within seconds, it changes with sweeping hues of tangerine, magenta and a deep, rich purple, the color of ripe pomegranate. Some of the guests basked in this incredible summer sunset from Sirena’s private al fresco cabanas, which rest along the hillside, beside Solana bar. With a 180-degree panaroma of the sea, it is quite difficult to find a more picturesque or romantic setting. 

It is safe to assume, therefore, that the reason why so many lovers choose to spend their honeymoons in Shangri-La’s Boracay Resort and Spa is because their love stories have been inspired by nothing less than these magical few moments. Many an excited groom-to-be has asked the hotel to assist him in orchestrating a romantic proposal atop Boracay’s lovely hilltop Italian restaurant, Rima, or treetop suite for a private villa BBQ. Shangri-La’s Boracay Resort and Spa is only too honored to oblige and be part of the momentous occasion.

Overheard on the other table, an elderly German sporting his newly acquired Boracay tan, says, “At first I thought the price per night was pretty steep, but sitting here; it’s a small price to pay. The view is priceless.”

Patti admits that the many take into serious consideration Shangri-La’s price point. “We offer very fine things that command a certain price, but we are very decent and humble about it,” she says. 

The Sweetness of Silence

While the all-night parties and raves in Station 2 of Boracay anchor the weekly calendar, the time spent on Shangri-La’s two private beaches, Punta Bunga and Banyugan, seems to lengthen and soothe the soul, like a well-worn watch that is wound down to the soft rap of a metronome. 

But quiet and luxury should not be mistaken as a boring combination. You can enjoy serenity, the clearness of thought, while surfing the waves, walking the reefs or discovering the colorful depths of one of the 20 marine sanctuaries surrounding the resort. Thus, all the treatments — from the local Pinoy hilot to Asian wellness massages — offered at Chi underline the philosophy of balance and movement. 

One of the recommended therapies under Shangri-La’s Sense of Place treaments is the fluid, sensual massage, the Hot Dinu-Ot. Highly recommended to awaken long slumbering senses, this deeply sensual and rejuvenating therapy uses a balm made from local indigenous sambong, lagundi, morin and lemongrass. The individual is wrapped in banana leaves and left to sweat out the toxins in a 75-minute steam bath. While the masseur kneads away the knotted nerves on your back, your mind is allowed to sit in the sweet silence, left to drift in and out of precious sleep. As fast as the ice melts on the warm onyx stone in the sauna, the native therapy just as easily melts away your bodily aches.

B Hotel: Beyond Business


“Business or pleasure?” the immigration officer asks as his hand hovers over 
your passport with a red stamp. You mumble a reply, to which he smiles and waves you off, half-listening and disinterested. But as you walk away, in your head, you wonder, 
“Why can’t it be both?” 


At B Hotel, they have not only pondered the same question, they have also offered an enlightening thought — mixing business with pleasure is not only possible, it is recommended.

Unlike its sister hotel, the five-star Bellevue Manila (also managed by the Bellevue Hotels group), B Hotel is a masculine, no-frills business hotel for travelers. The Prime Café, Chan points out, is also the favorite watering hole of businessmen and golfers who play at the nearby courses in Alabang and Laguna. 

It is not surprising that Prime Café has become one of the favorite places of gathering as it offers great value for your money dishes that people from all walks of life just can’t say no to. Acacia Hotel Manila: A Southern Shade


In the booming district of Alabang lies a quiet shade for tourists and staycationers — Acacia Hotel Manila. Despite bearing a name that finds its roots in foreign land (the genus originated primarily in Africa and Australia to be exact.), this homegrown five-star luxury hotel shares why the conditions are right for it to blossom on Philippine soil. 

When one utters the name “Acacia,” it conjures up an image of an earth-toned, calming abode, accented with fresh blossoms and delicate garden-inspired interiors. But enter the glass doors of Acacia Hotel Manila and you’ll be pleasantly surprised.


Within the glass-encased abode is a juxtaposition of distinct patterns, bolder prints and color: metal orb pieces of sculpture and crop-circles leading up to the entrance, black and white paisley printed lounge chairs on zebra print carpet, giant green and orange blooms on brown tapestry against a more than colorful striped carpet, and psychedelic blue LED lights arranged in waves on the ceiling. A gigantic metal piece, which resembles a treetop, hangs behind the guest relations desk, while a red and gold abstract piece by Filipino artist Bernie Pacquing crawls across the lobby wall. The different elements may seem visually jarring at first, but when seen as a whole, (surprisingly) blends into a harmonious dream. You have to admit — Acacia has flair.  The hotel’s general manager, Bobby Horrigan, seconds the motion and beams with pride: “From the driveway to our lobby to each of the 262 suites, we have a distinct design. There are none like us in the area.” And a standout the hotel proves to be. 

Proud to be Pinoy

Aside from becoming one of the favorite hotspots of the locals as well as tourists (especially the Korean and Japanese market) because of its accessibility to nearby golf courses, the blossoming success of the hotel is attributed to its incomparable Filipino hospitality and service. 

“I remember people always talking about world-class hospitality,” Horrigan says, “But we’re better than world class; we are Filipinos. We give that genuine hospitality that the Filipinos have become known for from sunrise to sunset. And we are consistent in providing that,” he says. CHMI Hotels and Residence, Inc. president Cheryl Rodriguez-Chua then adds that Acacia is one of the few hotels in the country that employs an all Filipino staff. “From the owners to the general manager, down to the staff, we are truly 100 percent Filipino,” she beams. Now, sumptuous Asian spreads and international favorites crafted by the country’s best can be enjoyed from morning to midnight. 


With its eclectic interiors and strong Filipino pride, Acacia Hotel seems to have a misplaced name. If one were to think about it, wouldn’t “Narra” be a more fitting choice? Chua — possibly having read this writer’s mind — explains, “ Many ask why we chose the name Acacia. We know that Acacia is not the national tree nor do we have any furniture made from Acacia in the hotel, but we thought the name ‘Acacia’ was a fitting choice because like the Acacia tree, we aim to provide comfort like a shade; a safe haven such as a shelter; and a strong and stable place that guests can keep coming back to.” And that, this writer cannot contest.
